Steps: Cherry Sauce
Step 1:
Dice cherries.
Step 2:
Melt 1/3 stick of butter in a pan over medium high heat.
Step 3:
Add cherries.
Step 4:
Add port wine.
Step 5:
Add syrup of cherries to taste.
Step 6:
Simmer until cherries become soft and liquid in pan has reduced to 1/3 of beginning amount of liquid.
Steps: Bourbon Apple Sauce
Step 1:
Dice apple.
Step 2:
Melt 1/3 stick of butter.
Step 3:
Add bourbon.
Step 4:
Add brown sugar.
Step 5:
Add apples.
Step 6:
Simmer until reduced to 1/3 of beginning amount of liquid.
Steps: Peach Sauce
Step 1:
Peel and slice peaches.
Step 2:
Melt 1/3 stick of butter.
Step 3:
Add brandy.
Step 4:
Add peaches.
Step 6:
Simmer until reduced to 1/3 of beginning amount of liquid.
Steps: Foie Gras
Step 1:
Pat all cubes Dry with paper towel.
Step 2:
Heat Cast Iron Pan to medium high heat.
Step 3:
Lightly oil pan with high temperature oil (avocado oil is preferred).
Step 4:
Do not overcrowd pan as the fat from the foie gras will darken the cubes lightly.
Step 5:
Sear each side no more than 45 seconds.
Step 6:
Use Spatula to remove then transfer to paper towel lined plate or baking sheet.
Steps: Assembly
Step 1:
Transfer all sauces into their own serving bowl.
Step 2:
Place Foie Gras cubes on cutting board.
Step 3:
Let the guests assemble their own cubes with their preferred sauce.
