Steps

Step 1: 

In a shallow dutch oven, heat the oil to 350 degrees.

Step 2:

Make sure eggs are dry.

Step 3:

Roll eggs in flour to coat.

Step 4:

Pinch off enough ground sausage (about 2.5 to 3 ounces) to form a complete layer around the egg. Set aside.

Step 5: 

Peel potatoes and grate with cheesy grater. Place in a shallow bowl, season with salt and pepper, and combine with parmesan cheese.

Step 6: 

Roll each egg wrapped in sausage around in flour to coat.

Step 7:

Beat 2 raw eggs and milk in small mixing bowl.

Step 8:

Dip each egg in the egg wash then roll in the grated potato/cheese mixture until completely covered.

Step 9: 

Drop eggs one at a time in the oil and fry until golden brown.

Step 10: 

Remove from oil and place on a plate lined with a paper towel.
