I was nervous trying the andouille sausage because of the spice level but these sausages are packed with great flavor and yes a little kick. I love that you eat them on top of pasta, in a hoagie bun, on a charcuterie board and ways I had not even thought of! My favorite is dressing the sausage in a hoagie with bell pepper and onion. The casing is great because its not tough like competitor sausages.
